My dad is in town this week to visit Justin and me in Alpine. We are having a really good time. I was going over what meals to cook this week on Sunday night and it hit me...my dad and I love meatloaf. Justin, on the other hand, tells me that the only thing that should be in a loaf is bread. Well, we outvoted Justin. We get to have meatloaf tonight. I have the best recipe ever. It is from my grandmother. I am going to reveal it to everyone for their dining pleasure.
1 pound lean ground beef
1 cup old fashioned oats
1/2 cup milk
1/2 cup chopped onions (I use the already chopped ones that you get in the freezer section)
1 egg, slightly beaten
2 teaspoons Worcestershire sauce
1 teaspoon garlic salt
1/8 teaspoon pepper
Topping
3 tablespoons brown sugar
3 tablespoons ketchup
1 1/2 teaspoon mustard
Heat oven to 350. In a large bowl, combine all ingredients and mix well with your hands. Put into a loaf pan that has been sprayed with Pam. Mix topping in a bowl and spread on top of the meatloaf. Bake for 40 to 50 minutes. Let stand 10 minutes. Makes 6 to 8 servings.
On a side note, I woke up this morning feeling light headed. I decided to just eat my morning yogurt and get some apple juice at the gas station. It went away about 20 minutes after I ate. I am so proud of myself. I didn't freak out and call Delilah with all my symptoms and beg her to tell me what was wrong with me. She should be so proud. Her little sis is learning to deal with pregnancy issues on her own! Too bad I only have 17.5 weeks left!

I can just imagine Justin saying that... too funny! We both love meatloaf, so I'll have to try out the recipe :)
Hilar. Good for you for making meatloaf. I will try the recipe.
Does your dad read while you are at work? Reading is the best.
I'm sorry, but I am gagging right now. Meatloaf is up there with bananas for me (although bananas aren't as bad)...
no way. it's like you just read my mind. i have never had meatloaf until last week because it sounds so disgusting. a loaf of meat? sick, man. anyway, jack's grandmother made some for us for dinner a few nights ago, so i had to eat it. it was delish. now i want to make some. now i have a recipe. thank you.
